Unfortunately, I can’t know exactly what happened, but it’s likely that it’s something with your oven. Before I figured out the actual temperature of my oven and its hot spots, I had some trouble with different quick breads baking all the way through as well, although I never had that problem with this one.

A trick I’ve learned from one of my friends is to stick a knife (all-metal, like a butter knife) right in the center of the loaf so that it brings more heat into the center of the loaf as well.
