Unfortunately, I can&#039;t know exactly what happened, but it&#039;s likely that it&#039;s something with your oven. Before I figured out the actual temperature of my oven and its hot spots, I had some trouble with different quick breads baking all the way through as well, although I never had that problem with this one.  


A trick I&#039;ve learned from one of my friends is to stick a knife (all-metal, like a butter knife) right in the center of the loaf so that it brings more heat into the center of the loaf as well.


I hope you&#039;ll try again; this is one of my family&#039;s favorite loaves, and I&#039;d hate for you to miss out on it!]]></description>
