I stumbled across your recipe, and I was a bit hesitant even though I have made many muffins before, I have never used zucchini in them before, but the recipe seemed very healthy and I had to give it a shot. I substituted 1/2 of the white whole wheat flour in the recipe for quinoa and oat flour to give them some more protein and texture and added a couple tablespoons of brown sugar and honey. They came out absolutely fabulous, I can’t believe how moist and decadent they are without any oil or butter. Great recipe, I will definitely be adding it to my list of go to muffin recipes for the future, thanks so much!
