Well! We’ve successfully made it through the Polar Vortex here in Buffalo. I loved having an excuse to curl up with a big mug of tea and watching the crazy white-out blizzard outside. So thankful that I didn’t have to go anywhere; I took the trash out before it got overly cold (it was still in the single digits), and I was frozen to the core even after bundling up like crazy. Here’s to some warmer temperatures coming our way!
With how cold it’s been, I really haven’t wanted a single thing that was cold, but I have of course, been having my usual ice cream cravings. No ice cream to be found in this apartment, so I had to whip up something that was a close second! And healthier.
Enter in this delicious chocolate peanut butter banana smoothie. With spinach! And greek yogurt, of course. This is a fantastic smoothie when you have a sweet craving but you still want to be healthy (it is the new year, after all!). I guzzled this in just a minute or so; it’s that good!
I haven’t been drinking as many smoothies as I used to, but now that I’m switching it up a bit with flavors (instead of the usual strawberry-banana-spinach smoothie), I think I’ll be hopping back on the smoothie wagon! Here’s to hoping the weather stays above freezing so I don’t feel crazy with my cold smoothies…

Chocolate Peanut Butter Green Smoothie
- 2 cups fresh spinach
- 1 medium banana, frozen
- 1/2 cup plain greek yogurt (I love Chobani)
- 2 Tbsp natural peanut butter
- 2 Tbsp cocoa powder
- 2-4 Tbsp milk (to your desired thickness)
- liquid stevia, to taste (I used 7 drops)
In a blender, combine all of the ingredients. Blend until smooth. Add more milk and/or stevia to desired consistency and taste. Enjoy!
