Roasted Broccoli

Broccoli is probably my favorite vegetable.  I love it steamed, smothered in some sort of sauce, cheese, roasted, sautéed…there really isn’t a way I don’t like it.  Roasted broccoli is a perfect side dish, especially if you don’t like your vegetables steamed or boiled to the point where they have no flavor.  This is definitely a dish full of flavor!


Topped with asiago with pan seared lemon tilapia and roasted potatoes

Roasted Broccoli
2 small heads broccoli, chopped
2 cloves garlic, minced (or thinly sliced)
about 2 T olive oil
chili pepper flakes, to taste
salt & pepper

Preheat the oven to 400ºF.  Chop the broccoli into bite sized pieces and toss with olive oil, garlic, salt, pepper and pepper flakes in a mixing bowl.  Place mixture on a cookie sheet and bake for about 20-25 minutes, until broccoli is tender and slightly browned.
