Medjool Caramel Dip

Who’s on Pinterest (you can follow me here)?  I’ve been loving using Pinterest for recipes that I’m interested in trying; it’s so much better than having a billion bookmarks (which reminds me, I should probably go through mine..)!  Really, they’re pretty much bookmarks with pictures.  I love that.  One thing I found when perusing Pinterest a while back was this salty medjool caramel.  I love dipping apples into caramel or peanut butter, and I’ve been really getting into dates lately (although I’m not someone that can just eat them on their own – way too sweet for me!), so this dip looked like it’d be right up my alley.

Since my mom loves dates, I thought this recipe would be best to save for when I was at home.  It lived up to all the expectations I had for it; it tastes just like caramel, and the texture is even creamier.  I had so much fun hollowing out the apple to use for a bowl, and it was even better eating it afterward (although I got my entire face covered in caramel..oops).

This is definitely a much healthier version of a caramel dip, and I’m willing to bet you’ll like it even better!

Medjool Caramel Dip

10 Medjool dates
1/4 t sea salt
6 T milk (I used lactose-free)
≈ 3 T water
1 1/2 t vanilla
Place the dates in a bowl, and cover with water.  Allow to soak for about one hour, until softened.  Pour out the water, remove the pits from the dates, and place in the bowl of a food processor.  Add the salt, milk, vanilla, and 3T water.  Pulse until creamy (add more water 1 T at a time if it’s not the consistency you’d like).
Cut the top off of an apple, and using a cookie scoop (or melon baller), scoop out the inside of the apple.  Spoon the caramel into the apple bowl.  Dip slices of apple into the caramel.
Store any leftover caramel in an airtight container in the fridge.
