Banana Nut Oatmeal Bake

Recently, I was given the chance to sample a variety of instant oatmeals made by Better Oats.  Better Oats has 23 flavors, and I was given the chance to sample their RAW Pure & Simple Pomegranate and Bare, MMM.. Muffins Blueberry Muffin and Oatmeal Raisin Cookie, and Oat Revolution Apples & Cinnamon.  They have a RAW Pure & Simple Chai Spiced that I would LOVE to try later on!  Their oatmeals are all natural with 100% whole grain oats and flax.  I was especially intrigued by the RAW Pure & Simple line, as they’re made with quinoa also, so they have a bit more protein than your usual oatmeal.  When asked to create a recipe, I knew I’d be using one of those ones as one of the ingredients!


The first thing that drew me in about these oatmeals was the packaging.  They use 35% less packaging than other instant oatmeals, and they’re adorable!  They fit in the pantry so well without taking up too much space.  The bags that the oatmeal come in are great, too.  They have a built in measuring cup – you fill the water up to the line right in the bag, so you can easily take these with you on the go without worrying about being able to measure the water or milk!

Better Oats

When it came to actually eating the oatmeal, they smell lovely as soon as you tear open the packet, and it gets even better as they’re cooking.  I was a bit nervous about how sweet they’d be, as most instant oatmeals usually give me a huge sugar high (which causes me to avoid them entirely), but these were just the right amount of sweetness with great flavor.  My absolute favorite was the pomegranate, but the apples & cinnamon comes in at a close second.  I loved topping the pomegranate one with pomegranate seeds for a bit of added health.  The blueberry smelled ridiculously heavenly (and tasted just as good).  They have loads of flavors, so be sure to check their website out to find one you’d love, and like them on Facebook!  The bare flavor, I knew, would be put to use for recipe making – it’s ideal for a foundation.

I was really in the mood for something banana, so I decided to make a single serving banana nut oat bake.  It’s super quick to put together, and it makes it more like a muffin than oatmeal, which is a great way to jazz up your regular bowl of oatmeal so you don’t get bored!  You do have to bake them in the morning, obviously, but you could easily just throw together the ingredients right as you get up (and get your coffee brewing), put it in the oven, and get ready a bit before your breakfast is all ready.  So delicious, and so worth it!

The oat bake would be great topped with a few banana slices, a drizzle of honey, and a sprinkle of cinnamon.  I used a bit of vanilla stevia drops to sweeten it, but you can easily swap that out for a tablespoon or so of honey.  A lovely, healthy change for breakfast!

Banana Nut Oatmeal Bake

serves 1

Banana Nut Oatmeal Bake

  • 1 packet RAW Pure & Simple Bare*
  • 1/8 tsp baking soda
  • 1/4 tsp baking powder
  • pinch salt
  • 1/4 tsp cinnamon
  • 1/4 cup very ripe banana, mashed
  • 2 Tbsp milk
  • 1 tsp coconut oil, melted
  • ? 7 drops liquid stevia
  • 1/4 tsp vanilla extract
  • 2 Tbsp walnuts, chopped

In a small bowl, combine the oatmeal packet, baking soda, salt, and cinnamon. Add the banana, milk, coconut oil, stevia drops, and vanilla, and mix until well combined. Fold in the walnuts. Spread batter into a mini tart pan (or muffin tin) lined with parchment.

Bake at 350ºF for 12-15 minutes, until a toothpick comes out clean (and the edges are golden). Cool slightly before eating.

This can easily be made the night before and reheated in the morning, if that suits your schedule better!

*You can replace the oatmeal packet with 1/2 cup of oatmeal if needed - it just won't have as much protein!
