Cinnamon and Vanilla Granola

Hope everyone is having wonderful holidays!  Yesterday, we had a really relaxing day at home with just our immediate family.  The celebration continues this weekend with the rest of the family!  In the meantime…

In the beginning of November, I invested in a pound of vanilla beans (there’s a great deal on Amazon here).  This means that I’m putting vanilla beans into pretty much everything I possibly can.  So when I was asked to make a simple granola, I decided on cinnamon and vanilla as key flavors.

The flavors are subtle (just the way I like my granola), but they give it a nice sort of homeliness.  This is definitely a granola that pairs pretty well with whatever you want to mix it in.  I especially liked it with blueberry greek yogurt.

Package some of this in a mason jar with some ribbon, and you’ve got yourself a lovely homemade gift.

Cinnamon & Vanilla Granola

Cinnamon & Vanilla Granola

  • 4 cups old-fashioned oats
  • 1 cup nuts, chopped (I used almonds and walnuts)
  • 1/2 cup unsweetened coconut
  • 1 Tbsp cinnamon
  • 1/4 tsp salt
  • 1 vanilla bean, scraped
  • 1/2 cup honey
  • 1/3 cup butter (or coconut oil)
  • 1/4 cup water
  • 1 tsp vanilla

Preheat the oven to 350ºF.

In a large bowl, stir together the oats, nuts, coconut, cinnamon, and salt.

In a small saucepan over medium heat, bring the honey, and butter to a boil. Remove from the heat, and stir in the vanilla bean paste and vanilla extract.

Pour the hot liquid over the dry mix, and stir until evenly coated.

Spread out onto a parchment lined baking sheet, and bake for 25 minutes, stirring once halfway.

Store in an airtight container.

*If you'd like to add any dried fruits, add up to 1 cup after baking.
