Homemade Thai Iced Tea

Whenever we go out for Thai food, I love ordering a Thai iced tea as a treat.  The creamy sweetness with subtle spice and vanilla flavor is perfect to counter a spicy Thai dish.  We haven’t found a good Thai restaurant near our new place yet, although I did have some darn good Thai food in Northern Virginia when visiting my sister, Lauren.  To ease the cravings until we find a great restaurant around here, I decided to make my own Thai iced tea!

To make Thai iced tea, all you need is black tea, sugar, anise, green cardamom, cloves, vanilla, and something creamy – regular milk, sweetened condensed milk, coconut milk, etc.  Most Thai restaurants use sweetened condensed milk, but since I was making it myself, I tried to cut down on the sugar; I’ve used coconut milk and regular whole milk with similar flavor.  I buy my spices from Indian spice markets (or you can find them in the Indian section in the grocery store if you have a fancy grocery store like Wegman’s!), and they’re usually very reasonably priced. Gram’s Apple Dumplings

My grandma’s apple dumplings are one of my very favorite treats around this time of year.  When she makes them, she usually freezes a bunch so that she can pull them out later when she has visitors.  I had apple dumplings for breakfast many mornings through my childhood – I could never get enough of her apple dumplings!  The last time we went to visit, I finally got around to getting the recipe from her so I could make my own.  Mm, I’m so glad I finally did.

I love going apple picking at this time of year, and I’m really excited that we have an orchard right down the road from us at our new place in Maryland.  Back in Buffalo, we had no shortage of places to go apple picking, so I’m so glad that we still have somewhere to go (and it’s even closer to us than it was in Buffalo).  Our local orchard has only been doing apple picking on the weekends this early in the season, so I stopped at their farm market last week to grab some apples for these apple dumplings and to get a gallon of their fresh apple cider.  🙂 [Read more…]

White Canadian Cocktail

I’ve got a fun cocktail for you today – think of a White Russian with a Canadian-style twist, using one of my very favorite liquors, Crown Royal Maple!  This is a cocktail that my sister, Lauren, and I came up with while they were visiting me in Buffalo a while back.  It started out as just a cocktail with the Crown Maple and cream, but we made it many more times and both of us have found ways that we like it best.  I’m sharing my favorite version of it today.

Between the three of us (I have two sisters, Jenny and Lauren), I look like the worst influence when it comes to alcohol, since pretty much every time we’re together, I get us into a liquor store, and we end up buying way more than we probably should.  I have a lot of fun crafting cocktails, so I have quite a wide array of liquors and cordials so I can whip up whatever I want on a whim.  I’d rather make it myself than go to a bar, so I figure I’m saving money in the long run, right?  If I don’t end up bringing some of my bar along with me when we get together, we usually end up going and buying more.  This is what happened when we had a sister weekend at Lauren’s in August (Jenny’s husband, Mark, was an honorary sister for the weekend and had just as much fun crafting cocktails, although he stuck with Moscow Mules).  I’m totally happy with the result of our purchases, though, because this was the weekend Lauren and I finally got down to figuring out how we like our White Canadians!
