Black Bean Fudge Cookies (Gluten Free, Refined Sugar Free)

Today was absolutely beautiful here in Buffalo – cool (in the low 70s) with a nice breeze.  I pulled my bike out and rode over to Aldi, stopping at the little farm market at the end of our street on the way.  I haven’t ridden my bike in a few weeks because it’s been so sticky and hot, so my day was definitely made by being able to ride!  The little farm market near us has lots of tomato plants, and it’s taking everything in me not to buy a few to place on our patio here.  Instead, I’m starting with another little basil plant – let’s see if my brown thumb can manage to keep it alive this time.  Third time’s the charm, right? 😉

 

Since it’s been cooler, I got right to baking without having to worry about the oven roasting the apartment with the sweltering heat.  Last night, we had homemade pizza night, cranking the oven up to 450ºF, and I followed it up with some fudgy cookies, needing to satisfy my craving for chocolate.

TARDIS Tea Pancakes (Blueberry Earl Grey Pancakes) – Gluten Free

July 10, 2013

So far, this week has been slightly stressful because of one sick little kitty we have.  Little Miss Nymeria hasn’t been eating (or playing), so I finally took her into the vet today, where she was deemed apparently healthy, other than the whole not eating thing.  An anti-nausea shot and a little force feeding later, we’re hoping that she gets better so that we don’t have to go back in for blood work.  Fingers crossed!

 

With my checking on the Little about every 20 minutes, it’s safe to say that I haven’t been very productive this week.  I got to do some experimenting in the kitchen with one of my favorite teas on Monday, and I’ve been eating the leftovers every morning for breakfast thereafter.  I’m glad I did, since I definitely didn’t have time to create myself a breakfast with all the checking the baby and stress-watching Chuck I’ve been doing!

Mango Carrot Lemonade

Did everyone have a good weekend?  Ours felt pretty go-go-go with lots of dinners out with Alex’s family.  Yesterday was our day of relaxation which we spent by beginning to watch Chuck.  Does anybody else love Chuck?  My sisters are obsessed with it, and we’re just finally getting around to watching it.  So far, so good.  I love the little quips shared between the characters – it’s a show that has me often laughing out loud, which isn’t too common for me.

Since we ate out a lot this weekend (and had a lot of ice cream), I wanted something that was fresh and healthy.  This mango carrot lemonade fit the bill perfectly.  Packed with carrots, it’s something I feel totally good about drinking.  Mango juice sweetens it (no added sugar here!) and lemon juice gives it a punch of tartness.
