Roasted Garlic Hummus

Over the last weekend, Alex and I walked over to one of his friend’s apartments down the road for a little graduation send off.  It was a nice little time, with a few drinks, some games, and lots of snacks.  While I was busy munching away on peanut M&Ms, Alex was really enjoying the garlic hummus.  For whatever reason, it tasted a bit like chemicals to me, but it reminded me how much I love a good hummus, so I immediately got into the kitchen a few days later and made some of my own.

It just so happened that I had some tahini (sesame seed paste) stashed away in the fridge, so I was all set.  I roasted up a few bulbs of garlic (a great method post here) – one for the hummus, plus a few extras to toss into dishes for dinner and just to munch on.  I love garlic.  Especially when it’s roasted.  Alex is a huge fan, too, so I figured we needed a lot.  I buy great big bags of garlic at a time, so we rarely run out.  I also made some seeded crackers that we fell in love with, which I’ll be sharing in a later post!

Rich Dark Chocolate Brownies (Gluten Free, Vegan, Refined Sugar Free)

Did everyone enjoy the long Memorial Day weekend?  Alex and I kept it pretty low key, relaxing at home, but we also had the chance to finally act like it was summer.  Although it was kind of chilly, we made the best of it by taking a nice walk to get ice cream on Saturday, and we had a picnic with Alex’s mom and step-dad on Memorial Day.  We even got to see one of my best guy friends from home (Pittsburgh) for lunch as he and his girlfriend made their way to Toronto for the weekend.  Surreal, since I consider Buffalo an entirely different world, but it was a nice surprise!

I’ve been wanting to make some really chocolatey brownies since I’ve been finished with school, and I finally got my chance this weekend.  I brought these along to the picnic, knowing that Alex’s mom would enjoy trying them, since they’re gluten free and free of any processed sugar.  They’re sweetened with dates and a bit of liquid stevia, so I was both really excited and a little bit nervous as to how they would taste.  Thankfully, these were just what I was looking for.  Super rich and chocolatey, not overly sweet, with a texture like fudgy cake.

Homemade Whole Wheat Tortillas

Tortillas are something I’m pretty picky about.  As most grocery store tortillas have partially hydrogenated oils (trans fats) in them, it’s not often I find one that I’m willing to purchase.  We’ve been able to find some good ones that are pretty high in fiber from Sam’s Club, but we only get those every once in a while, if one of our parents picks them up for us, since we don’t have a membership.  Otherwise, the tortillas I find suitable for us at the grocery store are a bit too pricey for the 10 tortillas usually in the package.  So, as I usually do when I can’t find something to be satisfied with from the store.. I made my own!

As luck would have it, these were super easy and so delicious.  Alex had one of his childhood friends over for dinner the other night, and I made these for tacos.  Knowing they were whole wheat, Alex was a little worried they wouldn’t be good enough for company, but he ended up being pleasantly surprised.  They’re just what you would expect from a flour tortilla, with subtle flavor and a hint of nuttiness, being whole wheat.  And no chemicals or hydrogenated oils!  Excellent.
