Cinnamon Candy Apple Sangria

After a pretty hectic work week, all I wanted to do for Halloween was sit on the couch, cuddle with my kitties, and watch Halloween movies.  To make things a little bit more festive, I decided to make a white sangria with apple cider.  Take some Goldschläger, butterscotch schnapps, a bottle of dry white wine, and some apple cider, and you’ve got yourself one boozy cider drink that tastes like a lovely cinnamon spiced candy apple!

I always love adding butterscotch schnapps and Goldschläger to hot apple cider for a warm cocktail, so I couldn’t wait to add in some wine to make a festive sangria.  Because the schnapps and the cider are both really sweet, I recommend using a dry white wine like Pinot Grigio to offset it.  I also cut up Granny Smith apples to put into the sangria itself to counter that sweetness.  The fruit in sangria is always one of my favorite parts – I love eating the wine soaked fruit after my glass is empty! Whole Wheat Chocolate Croissants

I’ve got an extremely decadent treat for you today, one of my very favorite things to indulge in – chocolate croissants!  Made with whole wheat flour, they are still just as full of butter as any croissant!  YUM.

This was my second attempt at making chocolate croissants.  I came to realize very quickly that the type of butter you use is very important in making a proper croissant.  My first try, I used butter from the local creamery here, but it’s definitely a little more watery, so my croissants spread out like crazy when baked.  They were still delicious but not very pretty.  My second try, I stuck with my absolute favorite butter, Kerrygold.  The rich, European-style butter, which is higher in fat than regular, American butter, makes the perfect croissant, with a crisp crust, and extremely soft interior.  They carry Kerrygold at most of our grocery stores around here, so it’s just about all I buy now for butter!  So good. Peanut Butter Granola Balls

These peanut butter granola bars are nutrient dense little powerhouses that are perfect when you need a quick pick-me-up to keep away those hangry moments in the morning or afternoon when it’s not quite time for another meal yet.  Simple ingredients, easy to throw together, and full of healthy fats, fiber, and protein!

I mentioned last week that I was starting a new job this weekend – my first pharmacist job!  If you know anything about being a pharmacist, you know these peanut butter granola balls are such a useful snack in a busy pharmacy.  Sometimes, we might not have the chance to actually have a real meal while we’re running around filling prescriptions, so something quick that I can just pop into my mouth and keep going and feel full after eating is pretty fantastic.  The same can be said about basically all jobs in a health care field:  quick, easy, & filling = perfection.
