Baked Onion Rings (Gluten Free)

Over the Easter weekend, I ran the Pittsburgh Pirates 5K with my sisters and cousin.  Of course, I’ll be one of the first to mention that I really dislike running.  I love doing cardio, but running has just never been my ideal way to do it.  We had so much fun at the 5K, and since it seems to be turning into a sort of tradition around holidays, I decided I should start running at least once a week so my leg muscles are not so sore after these races.  I started yesterday and did 4 miles.  My knee started protesting at about 2.5 miles, and now it’s a challenge to bend it.  Oops…  Let this be a reminder to always recover from the first run before moving onto the second.  😉

Totally unrelated to running, but completely delicious (and way better than running), are these onion rings.  I’ve made onion rings a couple of times, but I never paid enough attention to amounts of ingredients to be able to share.  And, honestly, those tries were not that great.  After reading all about soaking the onions in buttermilk first from Sally’s Baking Addiction, I knew I had to try again.  Boy, what a difference it made!  The onions are perfectly soft, and they taste fantastic. Orange Vanilla Shortbread (Gluten Free)

I usually like to make something special for Easter.  Last year was a pastel cake to doubly celebrate Easter as well as my cousin’s graduation from nursing school.  This year, I didn’t have very much time, so I stuck with something simple that would also travel well:  shortbread.  I added in some bright orange flavor and soft vanilla, which suit Easter just fine (or any time, really).

Some of my favorite cookies are scented with orange, although I’ve never made any in my own kitchen.  It was beyond time to do it, and it also gave me a perfect excuse to try making gluten free shortbread.  I used almond meal and buckwheat flour, as I have been doing quite often lately, and the result was just right.  Light and soft without being crumbly. Homemade Buckwheat Cheez Its (Gluten Free)

This week is an interesting one.  For one of my classes, we have to wear insulin pumps to simulate having diabetes.  This means I’ve had a device attached to my stomach for the past couple days, and I have to test my blood sugar before each and every meal and dose myself properly with “insulin” for the amount of carbs I’m eating.  I’ve been lucky in that I’ve had no discomfort, compared to a few of my friends complaining of itching and pains, but it’s definitely weird.  Working out when you think something is going to just rip out of your skin is kind of…scary.  I definitely give major props to anyone that wears one of these pumps all the time, although I have gotten used to it as time goes on!

It’s also been a pretty busy week, so I made sure to have some yummy snacks on hand.  I finally got around to testing out a gluten free version of the very popular homemade cheez its, and buckwheat flour had the best result.  It has the same texture and crunch as regular wheat flour, although the color is definitely kind of strange.  The flavor is so spot on, though!
