Rosemary Cheddar Quick Bread

Has everybody recovered from Thanksgiving, now?  My sisters and I ran the Turkey Trot on Thanksgiving morning in the 18 degree weather, and my joints were yelling at me for the entire weekend following that.  It was a great run, actually, but since I tend to do my workouts inside, and I never actually go running, it was a bit of a shock to my muscles.  I’d definitely do it again next year, though!

This week is my last week of classes, so there are lots of deadlines looming and one final exam to study for.  With only two things left to complete, I’m feeling great!  Then comes the extremely long winter break – 7 weeks this year!  I cannot wait.  Baking, skiing, and visiting with family galore!

With my last “busy” week, I made some delicious quick bread to go with soup for dinner one night (soup recipe coming soon).  This bread is soft, cheesy, and a little buttery, with the perfect crunchy exterior.  So perfect for dunking!

Twisted Cinnamon Apple Bread

Is everybody ready for Thanksgiving?  Alex and I are going to attempt to make the trek down to my grandma’s down in PA later on today, weather permitting.  Hopefully the weather is nice to us, because I can’t wait to see my family!

I didn’t actually get a chance to make anything for Thanksgiving with my crazy schedule lately and a new kitten, but I do have this delicious apple bread to share.  It’s a perfect holiday breakfast treat, sweet and full of cinnamon, without being over the top indulgent.  Gotta save that for later on in the day, right?!

Mocha OREO Cookie Balls

Every year, we have Christmas Eve dinner at my aunt’s house.  One year, she made OREO truffles (OREO cookie balls), and she’s pretty much not allowed to not make them ever again.  Have you ever had an OREO cookie ball?  They’re addicting, in the most rich, chocolatey way.  The best way, in my opinion.

We love all things coffee around here, so I decided to make some mocha OREO cookie balls.  It’s a super simple way to add another dimension to an extremely popular treat!  All it takes is some instant espresso powder in both the OREO filling and chocolate coating to really amp up the coffee flavor and add a bit of sophistication.  😉
