Zucchini Brownies (Gluten Free)

This semester is shaping up to be super exhausting yet relaxing at the same time.  I have 3 days packed full with classes (one of them is a 13-hour day), which is extremely tiring, but then I have Thursdays and Fridays off, giving me a four-day weekend every. single. week.  That makes this weekend (with Labor Day) a five-day weekend!  WOOT.

Having a burst of 3 really busy days means that I need to do a whole lot of cooking and baking beforehand to make sure I have enough food for breakfast, lunch, and dinner on those days.  This week, I didn’t really prepare very well.  I had these brownies in the fridge and not much else.  So what did I do?!  You better believe I had brownies crumbled over top greek yogurt for breakfast somedays or for a post-workout snack.  Since these brownies are actually pretty darn good for you, that actually made for a pretty decent (and filling) meal! Zucchini "Spaghetti" with Spinach Pesto

Over the weekend, I made some spinach pesto, and I’ve been enjoying it rather frequently this week, both in dinners and lunches.  I originally made it to top zucchini, shredded long like noodles, which is what I am sharing with you today.  With the leftovers, I’ve been using it for sandwiches since I’m now at school all day for loooong hours.  The sandwiches are so simple (since I haven’t really gotten any lunch meat or anything yet):  habanero jack cheese, spinach, and pesto, on multi-grain thins.  SO tasty.

This pesto is nice and garlicky, with a bit of tang from lemon juice.  The pesto uses cashews instead of pine nuts, so it’s not going to break your wallet!  I used just a hint of basil, since my basil plant doesn’t have quite enough at this point to be making even a small batch of pesto.  I love spinach pesto, so that was fine with me!  I am in love with the bright green hue!

White Peach Sangria

I start classes again today; I’m definitely not looking forward to early mornings and looong days full of sitting in the same two lecture halls again.  So I’m going to pretend it’s still summer vacation with this peachy sangria!

I love, love, love making sangria for parties.  I prefer white wine based sangrias during the summer and red wine based sangrias in the winter.  It’s never the wrong time for sangria!  Just fill up a big punch bowl for serving it up – it’s always a hit!
