Carrot Ginger Dressing

Can you believe we’re already halfway through November?!  This year is absolutely flying by.  I’ve hardly even started to think about what sort of treat I’ll make for Thanksgiving – what kinds of desserts are you having for your Thanksgiving?  There are always lots of pies at my family Thanksgivings, so I always try to mix it up a bit.  I suspect I’ll be perusing Pinterest a good bit for inspiration..

In the meantime, I absolutely have to share this dressing with you.  Alex is a huge, huge fan of hibachi restaurants – we have one pretty close to us that is the main place we go when we want to go out to eat. If I didn’t like their carrot ginger dressing so much (and sushi), I probably would’ve gotten sick of it a long time ago.  But I love, love, love their dressing.  I think I’ve pinned different recipes for it four or five times.  I finally got around to making it, and while it’s not quite the same as the one that I’m used to, it is just as amazing.

Apple Cider Caramel Sauce

Ah.. has it really been just about 20 days since I’ve posted last?  Alas, I have no excuses other than school, and life in general, has gotten extremely busy.  I have lots of recipes lined up that I just haven’t gotten around to posting.  I’m starting with my absolute favorite that I’ve been enjoying every day since I’ve made it.

Apple Cider Caramel.  Now, I primarily made this because Perry’s Ice Cream was kind enough to send me their fall flavors to try – Pumpkin Pie and Apple Pie.  I immediately began thinking about the toppings I wanted to try with them, and apple cider caramel just sounded so.  good.  The apple pie flavor was my favorite – it’s very simple, which I like, with apple pieces and pie crust pieces mixed throughout.  Alex wasn’t a fan of the crust pieces, but he also isn’t that big of a fan of pie crust in general.  The caramel sauce really threw this ice cream over the edge into absolutely amazing!

Pumpkin Oat Chocolate Chip Cookies (Gluten Free)

I don’t know what it is about fall, but I’m all about comfort.  Primarily in the comfort of good friends, since I don’t have much time for the comfort of a good book.  I’ve recently got back in regular touch with my two very best friends, who I don’t get to see often, so I’ve been relishing in the regular contact. And of course, with fall comfort, comes comforting recipes..

..My first pumpkin recipe of the season!  I’m on a cookie kick, so of course I started out with some pumpkin cookies.  I made these ones gluten free, just for a bigger health boost (with almond and oat flours).  These remind me of an old fashioned spiced oatmeal cookie, with a burst of pumpkin flavor.  Talk about comfort at its finest.
