Quinoa Molasses Crinkles

Throughout the blogosphere, I’ve been reading about many longing for fall and the spiced treats that come along with it.  With the heat that we’ve had lately, I mirror those sentiments, but of course, I acted on it as well.  Next thing I knew, my apartment smelled like Christmas, and my favorite cookies were coming out of the oven.  I am not ashamed.  Sometimes, you just need a bit of fall in the midst of a sweltering summer, to keep your sanity, of course.

Molasses Crinkles are my absolute favorite cookie.  Believe it or not, I’ve never actually made them before.  My grandma has made them for as long as I can remember, and I just never thought I could do them justice – there’s a certain flavor to them that I can’t really describe, that I thought just couldn’t be replicated.  Every time my grandma makes Molasses Crinkles, I eat at least 3-5 per sitting.. I love them that much.

Carrot Cake Quinoa Bars

Last week, I started doing P90X, after finishing Insanity: the Asylum and taking one week easy in between, doing mostly yoga.  So far, I’m actually quite enjoying P90X – it’s such a stark contrast from any of the Insanity programs, so it’s definitely a way to make sure my body never adapts to any one workout.  I like that it’s a lot more strength centered – I may have some pretty great back muscles once this is all done.  My back has definitely been feeling it; I think it’s permanently sore at this point, haha.

These bars are perfect for fueling me for the workouts.  I’ve been eating one with greek yogurt and a banana for breakfast every morning this week, alternating between flavors (cherry, banana nut, and carrot cake).  So good! [Read more…]

Black Bean Brownies (Gluten Free)

Last Thursday, I took Nymeria for her spay surgery.  Immediately upon her return home, she was ridiculously wound up, to the point that I had to go get an e-collar for her.  So, up until last night, we had a baby conehead kitten.  At first, she was running into things left and right, but over the week, she got waaay awesome at maneuvering and playing with her new neck shade.  We just got a new kitty castle (play house) from my dad, so we figured her incisions were looking good enough to finally take the cone off so she would be able to play.  The cone definitely didn’t stop her from doing much.. like tearing apart the kitchen..
