Slow Cooker Sesame Garlic Chicken

When you’re busy, there is absolutely nothing better than a slow cooker for a great meal with minimal work.  This week, we have been all about easy – this fit that bill perfectly.

 

I’ll readily admit that I enjoy getting Chinese takeout every so often, and we often get general tso’s or sesame chicken.  I had that sort of craving, but I didn’t want something that would weigh me down for the rest of the night, since I’ve had to study quite a bit this week.  After doing some major Pinterest searching, I decided to make a variation off of these two recipes.  No deep fried chicken here!

Chocolate Zucchini Cake (Gluten Free)

My first round of exams for the semester began today – one down, two more to go.  This means this week will be fueled with a whole lot of coffee and quite a bit of this healthier chocolate cake.  Nothing like finishing off a full 8-12 hour day of studying with a nice chunk of chocolatey cake.

This cake is rather quick to come together, which I think is always a must in the hustle and bustle that is fall.  If you’ve got any zucchini left from your garden, this is a great way to use it! [Read more…]

Apricot Granola Bars (Gluten Free)

This week, I seem to be incapable of cooking a simple meal for myself; I had cereal for dinner 2 nights thus far, and was lucky with every other meal in having leftovers to heat up.  Tomorrow, I already have cooking and grocery shopping planned, so I’ll finally get a decent meal in me.  Thanks to these bars that I made over the weekend, my breakfasts have not suffered.

I first saw these on The Pastry Affair and was immediately excited about soaking the dried apricots in tea to plump them up.  Anything with tea sounds fantastic to me, and I just so happened to have a great big bag of dried apricots from another little project I’m working on.  I, of course, adapted them slightly to suit my tastes and what I had in my pantry; I love bars in that you can always switch up ingredients as necessary.
